  • 1 teaspoon paprika
  • ½ teaspoon dried thyme or mixed herbs
  • 1 bay leaf (optional)
  • 1 tablespoon flour (optional, for thickening)

Step 1: Prepare the Chicken

Wash the chicken and pat it dry with paper towels. Cut into medium pieces if using boneless chicken.


Step 2: Brown the Chicken

Heat the oil in a large pot over medium heat.
Add the chicken and cook for 5–7 minutes, turning occasionally, until lightly golden.
Remove the chicken and set aside.


Step 3: Cook the Aromatics

In the same pot, add the chopped onion. Cook for 3–4 minutes until soft.
Add garlic and stir for 30 seconds until fragrant.


Step 4: Add Vegetables & Spices

Add carrots, potatoes, tomato paste, paprika, thyme, salt, and pepper.
Stir well and cook for 2–3 minutes.


Step 5: Make the Stew

Return the chicken to the pot.
Pour in the chicken broth and add the bay leaf.
Bring to a boil, then reduce heat to low.

Cover and simmer for 30–35 minutes, until the chicken is tender and vegetables are cooked.


Step 6: Thicken (Optional)

If you want a thicker stew, mix 1 tablespoon flour with 2 tablespoons water.
Stir it into the stew and cook for 5 more minutes.
