Preheat & Prep

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper or lightly grease it.

2️⃣ Cream the Butter & Sugar

  1. In a large mixing bowl, beat butter, brown sugar, and granulated sugar together until light and fluffy. (About 2–3 minutes.)
  2. Add eggs, one at a time, mixing well after each.
  3. Stir in vanilla extract.

3️⃣ Combine the Dry Ingredients

  1. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  2. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

4️⃣ Fold in the Good Stuff!

  1. Stir in oats, chocolate chips, nuts, and coconut (if using).
  2. The dough should be thick and slightly sticky.

5️⃣ Scoop & Bake

  1. Use a cookie scoop or tablespoon to drop dough balls onto the prepared baking sheet, about 2 inches apart.
  2. Bake for 10–12 minutes, or until the edges are golden brown but the centers are still slightly soft.

6️⃣ Cool & Enjoy!

  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  • Serve warm with a glass of milk or coffee for the ultimate treat! 🥛☕
