๐Ÿฅ— Healthy Pickled Beets Recipe

โœ… Ingredients:

  • 4 medium beets (washed and trimmed)
  • 1 cup apple cider vinegar (or white vinegar)
  • ยฝ cup water
  • 2 tablespoons honey or maple syrup (natural sweetener)
  • 1 teaspoon salt
  • ยฝ teaspoon black pepper
  • 2 garlic cloves (optional, sliced)
  • 1 teaspoon mustard seeds or dill seeds (optional for flavor)

๐Ÿฅฃ Instructions:

  1. Boil the Beets:
    Place whole beets in a pot of water. Bring to a boil and simmer for 30โ€“40 minutes, or until tender when pierced with a fork. Let them cool, then peel and slice.
  2. Prepare the Brine:
    In a saucepan, combine vinegar, water, honey (or maple syrup), salt, and pepper. Add garlic and seeds if using. Heat just until it begins to simmer, stirring to dissolve salt and sweetener.
  3. Pickle the Beets:
    Place sliced beets in a clean glass jar. Pour the hot brine over the beets until fully submerged.
  4. Cool & Refrigerate:
    Let the jar cool to room temperature, seal it, and refrigerate for at least 24 hours for the flavors to develop. Best after 2โ€“3 days.
