🥒 Ingredients:

  • 2 medium zucchinis, thinly sliced
  • 1 small onion, finely chopped
  • 1 tomato, diced (optional)
  • 2 cloves garlic, minced
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup shredded mozzarella
  • 2 tbsp olive oil
  • 1/2 tsp oregano
  • 1/2 tsp dried basil
  • Salt and black pepper to taste
  • Optional: a handful of black olives, sliced
  • 1 egg (for binding, optional)

🥣 Instructions:

1. Prep the zucchini

  • Slice zucchinis thinly (you can use a knife or mandoline).
  • Sprinkle a little salt on them and let sit for 5–10 minutes to draw out excess moisture.
  • Pat dry with a paper towel.

2. Mix the filling

  • In a bowl, combine zucchini, chopped onion, tomato, garlic, oregano, basil, salt, and pepper.
  • Add feta cheese, half the mozzarella, and optional olives.
  • (Optional) Add 1 beaten egg if you want a firmer texture.

3. Layer it

  • Use a small air fryer-safe baking dish or pan (ceramic, silicone, or metal).
  • Lightly grease it with olive oil.
  • Pour in the zucchini mix and flatten it a bit with a spoon.
  • Sprinkle the remaining mozzarella on top.

4. Air fry it

  • Preheat your air fryer to 180°C (350°F).
  • Cook the casserole for 20–25 minutes, or until the top is golden and bubbly.
  • If top is browning too fast, cover loosely with foil halfway through.

5. Let it cool slightly

  • Rest for 5 minutes before serving so it sets a little.

🍽️ Serving Ideas:

  • Pair it with couscous, quinoa, or crusty bread.
  • Serve alongside grilled chicken or chickpea salad for a complete Mediterranean meal.

✅ Tips:

  • You can add chopped spinach, bell peppers, or mushrooms.
  • No feta? Use ricotta or goat cheese as an alternative.
  • Make it spicy with a pinch of red pepper flakes.
