Here’s a simple and delicious recipe for Baked Chicken with Bell Peppers:


Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 3 bell peppers (assorted colors: red, yellow, green), sliced
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon chili flakes (optional, for spice)
  • Salt and black pepper to taste
  • 1 tablespoon balsamic vinegar (optional, for extra flavor)
  • Fresh parsley or basil, chopped (for garnish)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Chicken:
    • Pat the chicken breasts dry with a paper towel.
    • Season both sides with salt, black pepper, paprika, oregano, and thyme.
  3. Prepare the Vegetables:
    • In a large mixing bowl, combine sliced bell peppers, onion, and minced garlic.
    • Drizzle 2 tablespoons of olive oil over the vegetables, season with a pinch of salt, black pepper, and chili flakes (if using). Toss to coat evenly.
  4. Assemble in Baking Dish:
    • Place the seasoned chicken breasts in a baking dish.
    • Arrange the bell peppers and onion mixture around (or over) the chicken.
    • Drizzle the remaining 1 tablespoon of olive oil and balsamic vinegar over everything.
  5. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 20 minutes.
    • Remove the foil and bake for an additional 15-20 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F or 74°C) and the vegetables are tender.
  6. Garnish and Serve:
    • Sprinkle chopped parsley or basil over the dish before serving.
    • Serve hot with rice, quinoa, or crusty bread.
