
Crispy Vegetable Potato Patties
These delicious vegetable patties are crispy on the outside, soft and flavorful inside, and made with simple everyday ingredients. They are perfect for breakfast, lunch, dinner, or as a quick snack for the whole family.
Ingredients
- 2 medium potatoes, peeled and boiled
- 1 small carrot, finely grated
- 1 cup finely shredded zucchini
- 1/2 cup green peas, cooked
- 1/2 cup finely shredded cabbage
- 2 eggs
- 1/2 cup grated cheese
- 3 tablespoons breadcrumbs
- 2 tablespoons finely chopped parsley
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons cooking oil
Instructions
- Prepare the vegetables: Boil the potatoes until tender, then drain and mash them until smooth. Squeeze the grated zucchini well to remove excess water.
- Combine everything: In a large bowl, add the mashed potatoes, grated carrot, zucchini, cabbage, green peas, eggs, grated cheese, breadcrumbs, and parsley.
- Season: Add garlic powder, paprika, salt, and black pepper. Mix everything thoroughly until you have a soft mixture that holds together when pressed.
- Shape the patties: Take a portion of the mixture and shape it into small oval or round patties. If the mixture feels too soft, add another tablespoon of breadcrumbs.
- Cook: Heat a little oil in a non-stick skillet over medium heat. Place the patties in the pan and cook for about 3–4 minutes per side, until golden brown and crispy.
- Drain and serve: Transfer the cooked patties to a plate lined with paper towels to remove excess oil.
Air Fryer Method
Preheat the air fryer to 375°F (190°C). Lightly spray the patties with oil and cook for 12–15 minutes, flipping halfway through, until golden and crispy.
Tips for Perfect Vegetable Patties
- Make sure the zucchini is squeezed very well; excess moisture can make the patties fall apart.
- Chill the shaped patties for 15–20 minutes before cooking for better stability.
