If you’re craving a tangy, spicy kick in your pickles, here’s a tried-and-true recipe for Spicy Garlic Dill Pickles that delivers bold flavours without the need for canning.


️ Spicy Garlic Dill Refrigerator Pickles

Prep Time: 20 minutes
Total Time: 24 hours (for refrigeration)
Yield: 2 pint-sized jars(For the Love of Cooking)

Ingredients:

  • 2 English cucumbers, scrubbed and sliced into thick coins
  • 8 cloves garlic, peeled and smashed
  • 2 handfuls fresh dill sprigs
  • 2 teaspoons coriander seeds
  • 2 teaspoons black peppercorns
  • ½–1 teaspoon crushed red pepper flakes (adjust to taste)
  • 1 tablespoon sugar
  • 1 tablespoon kosher salt
  • ⅔ cup white vinegar
  • 1 cup water(For the Love of Cooking, foodiecrush, Love and Olive Oil)

‍ Instructions:

  1. Sanitize two pint-sized mason jars and their lids by washing them in hot, soapy water, rinsing thoroughly, and drying completely.
  2. Place 4 cloves of smashed garlic, a large handful of fresh dill, 1½ teaspoons of coriander seeds, 1½ teaspoons of black peppercorns, and ¼–½ teaspoon of crushed red pepper flakes into each jar.
  3. Tightly pack the cucumber slices into the jars, ensuring they are snug but not overly compressed.
  4. In a separate bowl, combine the sugar, kosher salt, white vinegar, and water. Stir until the sugar and salt are fully dissolved.
  5. Pour the brine mixture evenly over the cucumbers in each jar, ensuring the cucumbers are fully submerged. If necessary, add more water to cover.
  6. Seal the jars with their lids and refrigerate for at least 24 hours before tasting. The pickles will develop more flavour over time and can be stored in the refrigerator for up to 1 month.(For the Love of Cooking)

Tips for Extra Spice:

  • For a more intense heat, consider adding sliced fresh jalapeños or serrano peppers to the jars.
  • Increase the amount of crushed red pepper flakes or add a few dashes of hot sauce to the brine.
  • For a smoky flavour, incorporate a small amount of smoked paprika into the brine mixture.
