Certainly! Here’s a recipe for Stuffed Butternut Squash with Spinach, Bacon, and Cheese:

Ingredients:

  • 1 butternut squash
  • 4 slices of bacon, chopped
  • 2 cups fresh spinach, chopped
  • 1 cup shredded cheese (cheddar, Gouda, or your choice)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds. Place the squash halves on a baking sheet, cut side up. Drizzle with olive oil and season with salt and pepper. Roast in the oven for about 40-45 minutes or until the squash is fork-tender.
  3. While the squash is roasting, cook the chopped bacon in a skillet over medium heat until crispy. Remove the bacon from the pan and set aside on a paper towel to drain excess grease.
  4. In the same skillet, add minced garlic and chopped spinach. Sauté until the spinach wilts.
  5. In a bowl, mix together the cooked bacon, sautéed spinach and garlic, shredded cheese, breadcrumbs, and Parmesan cheese.
  6. Once the butternut squash is done roasting, carefully scoop out some of the flesh from each half, leaving about a 1/2-inch border. Mash the scooped-out flesh and add it to the bacon and spinach mixture. Mix everything well.
  7. Stuff each butternut squash half with the bacon, spinach, and cheese mixture, pressing it down slightly.
  8. Return the stuffed squash to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh parsley if desired and serve warm.
